Massaman Lamb / Chicken

Massaman curry offers a rich and comforting flavour profile. It is relatively mild, yet deeply aromatic. Whether you choose lamb or chicken, you will enjoy a warm blend of spices combined with creamy coconut notes.

Coconut Rice – Demonstration

Next, you will watch a clear and simple demonstration of coconut rice. This fragrant side dish pairs beautifully with many Thai dishes and enhances their flavour.

Pad Thai

Finally, we prepare Pad Thai. This famous stir-fried noodle dish is found throughout Thailand. It is enjoyed both as popular street food and as a classic restaurant favourite.

Selecting the Best Cuts of Meat

To begin with, you will learn how to choose the right cut for each dish. In addition, you will discover simple yet effective techniques for seasoning meat.

Practising Knife Skills

Next, you will develop your knife skills. You will practise dicing meat safely and efficiently. As a result, your confidence and precision in the kitchen will improve.

Blending and Mixing Spices

After that, you will explore the art of spice blending. You will learn how to combine ingredients to create perfectly balanced Thai flavours.

Making Massaman Curry Paste

Then, you will learn how to make authentic Massaman curry paste from scratch. This handmade paste pairs beautifully with lamb or chicken, creating rich and aromatic dishes.

This one-day Thai cookery course takes place in the historic town of Eccleshall, set in the heart of rural Staffordshire. Conveniently, we are easily accessed from Derbyshire, Shropshire, and Cheshire, and only minutes from the M6, A51, A50, and A34. In addition, free on-site parking is available for a smooth and stress-free arrival.

Full Support on the Day

On arrival, our friendly “kitchen angels” will be on hand to support you throughout the day. They will ensure you have everything you need from start to finish. We provide an apron, all equipment, and all ingredients required. To make things even easier, we also take care of the washing up.

Shared Dining Experience

During the day, you will sit down for lunch at our farmhouse table and enjoy the food you have prepared. As a result, it becomes a relaxed and social experience. It’s a great opportunity to share your cooking journey, enjoy good company, and savour delicious food and drink.

Sustainability & Takeaways

In addition, we make a conscious effort to reduce waste. We therefore encourage you to bring your own containers. This allows you to safely transport your cooked dishes home while supporting a more sustainable approach.

Our day courses run from 9:30 am to 3:00 pm. To help you settle in, you are welcome to join the team for morning refreshments from 9:15 am.
