Join seasoned cook and home economist Steph Clubb for her full-day Summer Classic Pâtisserie Experience.

First, embark on a hands-on culinary journey. You’ll gain the skills needed to create eye-catching bakery classics. Throughout the day, you’ll learn traditional pâtisserie techniques and methods used to produce striking bakes.

Steph’s passion and enthusiasm guide you at every stage. As a result, you’ll build baking confidence and master essential skills, whatever your prior experience.

Finally, enjoy a menu packed with delicious treats. You’ll create a show-stopping Pear Bourdaloue, a Strawberry or Raspberry Sablé Breton Tart, and a Mini Mango & White Chocolate Bavarois—perfect additions to your baking repertoire.

    Pear Bourdaloue

    This classic French tart features a rich almond cream filling paired with delicate vanilla-poached pears. Traditionally, it is believed to have been created by a Parisian pastry chef whose bakery once stood on Rue Bourdaloue. As a result, it remains a timeless favourite in French pâtisserie.

    Strawberry or Raspberry Sablé Breton Tart

    Built on a buttery Sablé Breton pastry base inspired by traditional French baking, this elegant tart combines texture and freshness. First, it is filled with smooth crème pâtissière, and then it is topped with either fresh strawberries or raspberries. Consequently, it delivers a beautifully balanced and visually striking dessert.

    Mini Mango & White Chocolate Bavarois

    This refined dessert begins with a crisp, buttery biscuit base. Next, it is layered with light mango bavarois and silky white chocolate ganache. Finally, a delicate honey tuile completes the presentation, adding both texture and elegance to this impressive sweet creation.

      Master Classic French Pastry

      First, you’ll master traditional French pâtisserie pastry as you create a classic Pear Bourdaloue. In addition, you’ll learn how to make smooth almond cream and perfectly vanilla-poached pears to achieve authentic flavour and texture.

      Create Buttery French Bases

      Next, you’ll learn how to prepare Sablé Breton, a rich and buttery French-style pastry base. This forms the foundation for elegant desserts with a professional finish.

      Develop Filling and Decoration Skills

      Then, you’ll prepare silky crème pâtissière, layer it with fresh fruit, and decorate a beautifully finished tart. Alongside this, you’ll also develop invaluable professional piping skills to enhance presentation and detail.

      Build Show-Stopping Modern Desserts

      Afterwards, you’ll discover how to create a Mini Mango & White Chocolate Bavarois.     This full-day Summer Classic Pâtisserie baking experience takes place in the historic town of Eccleshall, set in the heart of rural Staffordshire. Conveniently, the venue is easily accessible from Derbyshire, Shropshire, and Cheshire. In addition, it is only minutes from the M6, A51, A50, and A34, with free on-site parking available for all guests.

    Full Support in the Kitchen

    Throughout the day, our friendly kitchen angels will be on hand to support you and ensure you have everything you need. You will receive an apron, along with all equipment and ingredients required for the course. Best of all, we take care of the washing up so you can focus entirely on your baking experience.

    Course Timings & Welcome Refreshments

    The course runs from 9:30 am to 3:30 pm. However, you are welcome to arrive 15 minutes early to enjoy freshly brewed tea and coffee. After that, your full day of learning begins, focusing on the basics of classic French cakes and tart baking.

    Farmhouse Lunch Experience

    At lunchtime, you will join us around our farmhouse table. Here, the Perrys Field to Fork team will serve a freshly prepared light lunch for you to enjoy. In addition, this provides a relaxed opportunity to share your baking experience with fellow guests.

    Take Home & Sustainability

    Finally, you will take home everything you bake to enjoy with family and friends. Moreover, as part of our commitment to reducing waste, we encourage you to bring your own container to transport your delicious creations home.
