Get to grips with your Christmas Turkey and join master butcher Stephen on this hands-on, artisan butchery experience. Stephen will guide you through this short course, helping you pack flavour into this seasonal delicacy.
You will pick up a range of skills and techniques including also having the opportunity to create up to a 5 bird roast using a variety of game birds (optional) – Turkey, pheasant, goose, chicken and partridge, cooking timings, temperatures and you will even recreate Stephen’s homemade sausage meat stuffing to accompany your mouth-wateringly tasty Turkey.

Introducing our Master Butcher, otherwise known as Stephen Hill, who developed an interest in butchery at just 14 years of age. He studied at Birmingham College of Food and his knowledge deepened further in the artisan techniques of curing and smoking.

British Champion master butcher Stephen Hill will start by exploring the best ways to sharpen your carving knives. Stephen will then expertly demonstrate how best to prepare your 10-12lbs turkey, giving you the cooking instructions for a succulent roast. He will then guide you through the all-important carving techniques. You will also have the opportunity to create up to a 5 bird roast using a variety of game birds (optional) – turkey, pheasant, goose, chicken and partridge.
This hands-on, short course is the perfect beginner’s guide to knife skills and artisan butchery and will ensure your Christmas turkey is cooked to the ultimate perfection.

How to create a delicious bird in a bird
This evening cookery course takes place in the historic town of Eccleshall, in the heart of rural Staffordshire. Easily accessed from Derbyshire, Shropshire and Cheshire, we are only minutes from the M6, A51, A50 and the A34. We have free on-site parking.
Our “kitchen angels” will support you on the day and ensure you have everything you need. We’ll provide an apron, and all the equipment and ingredients you need. We’ll even do the washing up!
You’ll prepare an incredible roast turkey butterfly and two types of stuffing to take away, cook and enjoy at home. We make a conscious effort to reduce waste and encourage you to bring your own containers to transport your goodies home.
Our evening course runs from 5.30pm to 7.30pm and you can join the team for morning refreshments from 5.15 pm.
Introducing our Master Butcher, otherwise known as Stephen Hill, who developed an interest in butchery at just 14 years of age. His passion for the craft of traditional nose-to-tail butchery grew and over many years. He studied at Birmingham College of Food and his knowledge deepened further in the artisan techniques of curing and smoking.
He has won dozens of regional and national awards (for both his meat produce and baked goods) over the last three decades and he’s a well-respected judge of livestock at the Staffordshire County Show and English Winter Fair.
Perrys of Eccleshall went on to be named the Countryside Alliance National Champion butcher 2017-2018, under Stephen’s stewardship.

No prior experience is necessary for this course and the day will appeal to keen cooking enthusiasts and those who are new to cooking with turkey butterfly. It will be a wonderful experience and you will learn from Stephen who is passionate about creating delicious food from quality ingredients.
