Stephen Hill

Introducing our Master Butcher, otherwise known as Stephen Hill, who developed an interest in butchery at just 14 years of age. He studied at Birmingham College of Food and his knowledge deepened further in the artisan techniques of curing and smoking.

Preparing locally reared meat (within 5 food miles) you’ll learn how to deliver great food with the Weber charcoal BBQ and using the highest quality beef,  this Steak & Tipple experience allows you to learn about the wide array of steaks.

Working with a selection of fresh ingredients and using simple cooking techniques you’ll use the Weber BBQ charcoal grill to your advantage.  Stephen and Carl’s passion for artisan butchery and high-quality meat is contagious and utterly inspiring.

They will show you the best ways to cook a variety of steaks, from well-known ones to those hidden gems. Once you have cooked your way to perfection you will sit down at our kitchen table and enjoy your creations along with a freshly prepared salad, roasted new potatoes and a glass of red, bubbles or a bottle of local beer.

 

You will learn about the different types of steaks – Our grass fed beef is produced with only 5 food miles which creates the deep flavour and characteristic marbling.

You will learn the importance of the meats used and why they are used – Our breeds include the British Heritage breed Dexter, Angus, Hereford, and Shorthorn, in addition to a small amount of Wagyu.

You will learn how and what can change the flavour.

You will learn what is the best way to cook steak on direct and indirect heat from your Weber BBQ

This evening of social gathering and Weber BBQ cooking experience takes place in the historic town of Eccleshall, in the heart of rural Staffordshire. Easily accessed from Derbyshire, Shropshire and Cheshire, we are only minutes from the M6, A51, A50 and the A34. We have free on-site parking.

Our “kitchen angels” will support you on the evening and ensure you have everything you need. We’ll provide an apron, and all the equipment and ingredients you need. We’ll even do the washing up!

You will learn about Weber BBQ cooking and how to maximise ingredients to create great flavours.

Our evening course runs from 5.30pm to 7.30pm and you can join the team for refreshments from 5.15pm.
